Sweetgreen Launches Head Coach Incentive Program Targeting Six-Figure Manager Salaries

Fast-casual restaurant chain Sweetgreen is implementing a new compensation structure designed to elevate total pay for its top-performing restaurant managers above $200,000 annually. The Los Angeles-based company, which currently operates 289 locations across the United States, announced the head coach incentive plan as part of a broader corporate push to secure and retain top talent heading toward 2027.

Under the program, rewards will be distributed based on employee tenure, individual restaurant size, and operational performance. The compensation package incorporates higher base salaries, sales-based bonuses tied to restaurant revenue, and company equity. Chief Operating Officer Jason Cochran explained that the initiative forms a foundational element of the company’s 2027 strategic investments focused on operational excellence.

Cochran emphasized that talent retention remains as critical a challenge for the restaurant industry as initial recruitment. Highlighting the resources dedicated to finding candidates, he noted that retaining established workers is frequently overlooked. Under the new guidelines, top-performing head coaches running the highest-volume locations who have maintained a tenure of at least three years with the brand can achieve total compensation packages exceeding $200,000.

Alongside the compensation adjustments, Sweetgreen is expanding internal career development paths to transform standard restaurant employment into long-term professional trajectories. Cochran highlighted the example of a New York City restaurant manager who advanced to leadership after beginning as a dishwasher at the chain six years prior. The program aims to inspire hourly workers by creating clear pathways toward restaurant management.

The incentive framework is scheduled to take effect during the first quarter of fiscal 2027. In addition to the new salary structure, Sweetgreen maintains a head coach restaurateur program that provides specialized training and mentorship, offering eligible managers a $10,000 bonus for every employee they successfully develop into a head coach.

These organizational changes coincide with broader commercial efforts by Sweetgreen to broaden its appeal and alter consumer perceptions regarding pricing. In May, the chain introduced four wrap menu items nationwide, priced below $15 with an average cost of approximately $12.50. Chief Financial Officer Jamie McConnell previously noted that the lower price points are intended to shift how customers view the brand as it competes for diners.
